  • Step 1: We prepare the sprinkles. Roast the Szechuan pepper in a dry frying pan. When we feel a strong smell, take the pan off the fire. We pour the grains into the mortar and grate. We put it aside.
  • Step 2: Fry the chopped ginger and garlic in oil. Add the meat and continue frying. After a while, season with grated Sichuan pepper. Pour the wine and both soy sauces into the fried meat. Finally, add the zha cai (pickled mustard stalks) and fry for a while.
  • Step 3: In a bowl, mix the tahini, both soy sauces, vinegar and chili oil.
  • Step 4: Cook the noodles along with the pak choi according to the instructions on the package. When draining, remember to leave a little wat.
  • Step 5: At the bottom of the deep plate, first pour the sauce and a few tablespoons of cooking water. We put the noodles, pak choi and sprinkles with minced meat. Sprinkle the dish with chopped spring onions and sesame seeds. Before eating, mix thoroughly with chopsticks.

  • Step 1: In a deep frying pan, heat about 2 tablespoons of olive oil.
  • Step 2:Put the garlic and onion on the hot frying pan, and after a while, add the meat, chop it with a fork, for example, so that no thick meat lumps are formed.
  • Step 3: Add herbs and concentrate to the meat. Heat it up for a while, add the passata (tomato puree), cook over low heat for about 30 minutes.
  • Step 4: Cook the pasta al dente, serve it with sauce, cheese and basil.
